You can also decouple your game from Steam. Meaning you install the game, then rename the install folder, from Skyrim SE, or what ever it is named for you to to Skyrim SE2. Then make a new folder, and name it Skyrim SE, and inside make another folder and name it Data. Now go back into Steam and tell steam to uninstall the game. It will then uninstall the game folder called Skyrim SE but leave the real game behind. Now you can rename Skyrim SE2 back to Skyrim SE and also a good idea to back it up somewhere, that way you do not have install it again in the future. Now all you have to do is make sure that Steam is running when you launch the game, the game will check for Steam, see that its running and you can play all you want, and because you have decoupled it from Steam, it longer will get an update, you get to stay where you are and not worry about them messing up your game. Its not perfect, and i recommend it only for those that have chosen all of the mods that they want and that they do not need to update those mods. Because its become the in fashion thing to use versioned scripts in SKSE64 and F4SE, so you are forced to always move forward if the mod authors locks their mods and scripts to only newer versions of the script extender.
